I FOUND this recipe among our old family favorites and adapted it to make a small amount. It's quick and easy to prepare, but we still consider it a special treat. Make sure to warm up your milk and to 'temper' the egg and butter so it doesn't congeal.

I was looking for a good pancake recipe, I used this one added not quite a teaspoon of cinnamon, a dash of ground ginger and nutmeg and 1/4 of chopped pecans, they were awesome!

My two-year-old and I really enjoyed these this morning. Only alteration I made was adding a little vanilla extract. Otherwise, we kept it simple and as is. Delicious!
