Fish with Mustard Sauce on Spinach
Sole or flounder baked with golden mustard served over wilted spinach. Brought to you by dLife®

Ingredients
1 lb sole or flounder fillet, 4 ounces. each
1/4 cup ranch salad dressing
3 tablespoons plain whole milk yogurt
1-1/2 tablespoons prepared yellow mustard
8 ounces fresh spinach leaves
Directions
Preheat oven to 400 degrees F.
Rinse fish, pat dry with paper towels, place in 12-inch x 8-inch x
2-inch glass baking dish.
In a small bowl, combine salad dressing, yogurt, and mustard. Spoon
evenly over the fish.
Bake 8 to 10 minutes or until fish flakes easily with fork.
While fish is baking, remove stems from spinach, rinse thoroughly,
drain well.
Heat nonstick skillet over medium-high heat, add spinach, cook for 30
seconds or until wilted, stirring constantly.
Arrange spinach on plates, top with baked fish. Serve immediately.
