Fish with Mustard Sauce on Spinach Recipe

Ingredients

  • 1 lb sole or flounder fillet, 4 ounces. each
  • 1/4 cup ranch salad dressing
  • 3 tablespoons plain whole milk yogurt
  • 1-1/2 tablespoons prepared yellow mustard
  • 8 ounces fresh spinach leaves

Directions

  • Preheat oven to 400 degrees F.
  • Rinse fish, pat dry with paper towels, place in 12-inch x 8-inch x 2-inch glass baking dish.
  • In a small bowl, combine salad dressing, yogurt, and mustard. Spoon evenly over the fish.
  • Bake 8 to 10 minutes or until fish flakes easily with fork.
  • While fish is baking, remove stems from spinach, rinse thoroughly, drain well.
  • Heat nonstick skillet over medium-high heat, add spinach, cook for 30 seconds or until wilted, stirring constantly.
  • Arrange spinach on plates, top with baked fish. Serve immediately.
