I loved this Southwestern-style casserole when my mother made it years ago. Now my husband enjoys it when I prepare it. The flavor reminds us of enchiladas, but this handy recipe doesn't require the extra time to roll them up.

Firecracker Casserole Recipe

Ingredients

  • 2 pounds ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 to 2 tablespoons chili powder
  • 2 to 3 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 4 flour tortillas (6 inches)
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

  • In a large skillet, cook beef and onion until the meat is no longer pink; drain. Add the beans, chili powder, cumin and salt.
  • Transfer to a greased 13-in. x 9-in. baking dish. Arrange tortillas over the top. Combine soup and tomatoes; pour over tortillas. Sprinkle with cheese.
  • Bake, uncovered, at 350° for 25-30 minutes or until heated through. Yield: 8 servings.

Nutritional Facts 1 serving (1 each) equals 363 calories, 18 g fat (8 g saturated fat), 72 mg cholesterol, 941 mg sodium, 21 g carbohydrate, 4 g fiber, 28 g protein.

I prepared this tonight and it was a success. Very Delicious, of course, we topped it with some HOT Jalapeno peppers.....yummmmm!

Very, good and easy. The reason the recipe with the macaroni was dry, as the macaroni takes up the moisture from the recipes to cook the noodles. Would have had to add more moisture. When you substitute, you have to know your ingredients and how they cook.

This recipe turned out great. I was a bit worried about how it would turn out because so many reviewers said it turned out dry but it was not dry at all!! I am not sure what they did vs what I did but mine was moist, flavorful and just right. I used half ground beef and half ground turkey and added more spices and each person had the choice to put a bit of sour cream on top but that was all I changed. None of it was dry at all. so don't beware!

I followed the recipe pretty much to the letter and it received a rave review from husband. I will add less cumin and chile powder next time, perhaps mix the sauce with the beef and onion to have a moister bottom layer. Flavor was good, easy preparation.

This was very good similar to enchiladas but easier. I susbstitued a small can of enchilada sauce for the tomatoes, as I felt the tomatoes were too sweet compared to the meat. I also added a small can of diced green chilies and cilantro and this was very good. Will definitely fix again

I think taco lasagna is similar but better. This seemed to fall apart as it was dry.

I made a few substitutions to the recipe. I used fiesta nacho cheese soup instead of cream of mushroom and macaroni in place of the tortillas. I found this recipe to be very dry and kind of blah tasting. It was definitely missing something. Maybe some sour cream or another can of soup would help. But either way, I don't think I will be making this again any time soon.

Very good casserole. Made a few substitutions to use what was on hand, Pace Picante instead of tomatoes, a teaspoon of taco seasoning. Mistakenly put picante in with the beans/meat mix and it was a little moist but still turned out great. Husband definitely would like it to be on the menu often this winter. ESH in NC

One of my mom's standard recipes for years. The whole family loves it. Sometimes she adds roasted corn to the beans and always tops it with sliced olives. A super favorite.

This was very good and had a nice kick to it. I halved the recipe, still using the full can of beans (I prefer pinto beans). I also still used the full can of cream soup (I used cheddar cheese soup) and diced tomatoes and mixed half of that in with the meat mixture in the bottom. This way the bottom doesn't get too dry.

I just made this tonight and my husband loved it. It was hearty and satisfying on a chilly night. I think next time I might add some taco sauce to the meat mixture to keep it moist. This recipe is a keeper!

I made this substituting cream of chicken soup for the cream of mushroom soup and tomatoes with jalapenos for the tomatoes with green chilis. I have to admit that I was surprised how tasty it was. It's quick, simple and delicious! Will be making it again.

Sounds like I would like to add

some Picante sauce to the meat

mixture to avoid the dryness and

add flavor.

I just got done making this for my farmer hubby. I made it in two 8x8" dishes so I can freeze one for another day! Mine was also kind of dry but I simply stirred it all together on my plate and added lettuce, crushed tortilla chips and taco sauce!! YUMMY! You could probably use different soups (ie: cheese, onion ~ I used cream of chicken.) You could also try adding some cheese or even more tomatoes with green chilis to the meat mixture to help with the dryness. Also do not overbake! You only need to warm it to serving temperature as it's fully cooked.

I just made this and both my husband and I loved it. I doubled the reciepe for my large family, used 2 pkgs of taco seasoning instead of the called for spices, and added a chopped jalepeno for added hotness,,,and wow...it was a big hit!
