Festive Broccoli-Cauliflower Salad Recipe

Ingredients

  • 1 bunch broccoli, cut into florets
  • 3 cups fresh cauliflowerets
  • 1 medium green pepper, julienned
  • 2 medium carrots, thinly sliced
  • 1/2 cup thinly sliced red onion
  • 1/2 cup small pitted ripe olives, halved
  • 1/2 cup cubed sharp cheddar cheese
  • DRESSING:
  • 1 cup Hellmann's® Real Mayonnaise

  • 1/2 cup ranch salad dressing
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dill weed
  • 1/2 cup sunflower kernels

Directions

  • In a large bowl, combine the first seven ingredients.
  • In a small bowl, whisk the mayonnaise, salad dressing, Italian seasoning, garlic powder and dill. Pour over salad; toss to coat. Cover and refrigerate for at least 1 hour.
  • Just before serving, sprinkle with sunflower kernels. Yield: 14 servings (2/3 cup each).

Nutritional Facts 2/3 cup equals 253 calories, 24 g fat (4 g saturated fat), 13 mg cholesterol, 284 mg sodium, 8 g carbohydrate, 3 g fiber, 4 g protein.

We blanched the cauliflower and broccoli first. Wish we would have chopped them smaller and blanched them. We used shredded cheese instead of cubed. Our family just didn't care for the flavor, especially the second day. I did like the choice of veggies though and will use that part of the recipe in straight ranch next time.

I have made this salad twice now. It is very good. I especially love the dill. I am taking it to share for Easter dinner. This is definitely saved in my recipe box.

I have people asking me to PLEASE make this wonderful salad for every get together. My husband asks that I make extra so that he can have some for later since there is never any left.

I really enjoyed this salad! Very simple and easy to make, although I made a couple of changes. I used matchstix carrots (about 1/2c.) and shredded cheese instead of cubed. Will definitely make it again!!

We thought this recipe was a little too saucy. Next time, I will not use as much dressing mixture. We don't like much dressing on our salads. Not a bad recipe. The rest of it may taste better today!

I did a salad like this many years ago. I bought it at a deli first, then started making it myself. The dressing I used was Green Goddess. It was really good

Yes, this is like the broccoli salad with bacon bits.

No need to blanche vegis, just cut in smaller pieces.

Simply used reduced fat mayo,cheese etc. worked well for me. no fat reduced creamy taste factor so went to the reduced fat items. Really good for summer.

I was given a similar recipe 20 years ago. Mine has bacon bit added to it, very good.

This sounds really good but I don't know if I would spend 7 Weight Watcher points on it unless it was my dinner. I would have to find a way to lighten up the dressing or save some out for me before I put the dressing on it.
