Favorite Mexican Lasagna Recipe

Ingredients

  • 1-1/4 pounds ground beef
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 cups salsa
  • 1 can (16 ounces) refried beans
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (10 ounces) enchilada sauce
  • 1 can (4 ounces) chopped green chilies
  • 1 envelope taco seasoning
  • 1/4 teaspoon pepper
  • 6 flour tortillas (10 inches)
  • 3 cups (12 ounces) shredded Mexican cheese blend, divided
  • 2 cups crushed tortilla chips
  • Sliced ripe olives, guacamole, chopped tomatoes and sour cream, optional

Directions

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the salsa, beans, enchilada sauce, chilies, taco seasoning and pepper; heat through.
  • Spread 1 cup meat mixture in a greased 13-in. x 9-in. baking dish. Layer with two tortillas, a third of the remaining meat mixture and 1 cup cheese. Repeat layers. Top with remaining tortillas and meat mixture.
  • Cover and bake at 375° for 30 minutes. Uncover; sprinkle with remaining cheese and top with tortilla chips.
  • Bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. Garnish with olives, guacamole, tomatoes and sour cream if desired. Yield: 12 servings.

Great flavor. Not a black bean fan, so used a can of chili beans instead, which gave even more flavor. I did cut the recipe in half for the two of us, and still made plenty. Will definitely make again.

I used Trader Joe's salsa, enchilada sauce, refried beans and frozen roasted corn. Also their corn tortillas. I even used their taco seasoning packet. This way I know that it's all natural. Excellent recipe. A keeper.

I make this recipe often. I usually buy the ingredients in pairs so that I have one for now and one for a back up of the dreaded "what's for supper? I'm starved" busy nights. Tonight I did not have black beans in the cupboard so Bush's Grillin' Beans Black Bean Fiesta to the rescue.

Loved this recipe! I also omitted the black beans and added corn. Also used jalapeños instead of green chilies, as I love spicey food and it was awesome! Will definitely make again.

This turned out very good. Used less cheese (2 cups) and omitted tortilla chips. Used green onions and added canned corn. Wasn't salty at all. Not sure where people think the salt is coming from unless they used salted tortillas and salted tortilla chips.

We absolutely loved this recipe! Very easy to make, and the goodies on top are an extra bonus (sour cream, guacamole, tomatoes, olives).

I had hoped this would be a winner for us due to the previous ratings but I was disapointed. It uses too many canned items to end up with a taste that is salty and not very good. My family wouldn't eat it, we pitched it after dinner.

Well, my husband wasn't very excited about this recipe, so I decided to try it and see what he thought. He was surprised at how good it was! I omitted the black beans (personal preference) and used some extra cheese. I only used half the crushed tortilla ships called for, and next time will probably omit them altogether. Very good!

I made this for my family over the weekend and they absolutely loved it! I did not change the recipe at all except for I left out the black beans because its just a personal preference. If you like Mexican food at all then you will definitely enjoy this.

I liked this recipe. Very easy to assemble - took almost no time to put it together. It did taste a little "processed," I guess, maybe because of the canned enchilada sauce? In any event, it was easy to make and I will definitely make again. I used Morningstar Farms soy ground "beef" instead of the real thing - delicious!

Everyone loved it! I omitted the black beans, since no one in my family likes them. (They don't like refried beans either, but did not know they were in there!). Can't remember the last time we enjoyed a dish so much.

This is an awesome recipe my fam just loved it added a few modifications and the corn tortillas is a must plus a few shakes of cumin and I didn't add the black beans

These were very good but even better when using corn instead of flour tortillas. My family didn't like the slimy texture of the flour tortillas, whereas corn tortillas don't get that way. The flavor is awesome.

This turned out as pretty as the picture!I knew as soon as I took it out of the oven that it was a winner. This was very good, and very easy to prepare. Lots of flavor which my husband loves. My husband said he wouldn't change anything, but I might use just a little less refried beans (totally a personal preference) This turned out great and I will make it again.

LOVED THIS RECIPE! Some at my house like it HOT and some of us not so much -- so I used canned diced tomatoes instead of salsa. Those who love it hot topped theirs with HOT salsa. Everyone was very happy! (When I was combining everything in the skillet everyone was scooping chips in and eating it like dip!) YUMMY!
