For an inexpensive and easy-to-prepare dish, try this hearty casserole. You can assemble it ahead and bake it just before leaving for a potluck. People go back for seconds since it includes tasty basic ingredients like bacon, cheese and potatoes. -Pat Kuether, Westminster, Colorado

I have been making this recipe for many years for a variety of occasions. People always request seconds, and then the recipe!! I have increased the potatoes as one cup got lost in the recipes size ( I usually use @2 1/2 to 3 cups). I have varied the cheese type, left out the ham, added sausage.... it is always a hit.

My family did not give this recipe a single "Nay!" Drain and blot bacon, use a medium-sized onion, and low-fat cheddar cheese since casserole tends to be a bit rich. Worth the effort, and it (and you) will get rave reviews.

Very good, very filling. Used frozen cubed potatos that were thawed. Wheat bread tasted great for the bread cubes. Used canadian bacon instead of ham. Only difference I would change is I used Turkey Bacon - which next time I would use center cut bacon.

Made this for a family reunion weekend. No one liked it. Bland flavor, bread was mucky, runny. Followed directions to a T. Will not waste time/money on this again.

I made a few changes...I subbed 2 cans of mushrooms for the ham and used a can of whole white potatoes chopped for the potato, 4 cups of cheese and in place of the milk I used 2 pkgs of cream cheese and 1/2 cup milk beat together with the eggs (from another recipe). Also sauteed garlic with the onion....OMG...it was so good. I made it for mother's day brunch and came home with barely any leftovers! they couldn't stay out of it!

A favorite in our family. Dice then microwave potatoes with water in covered dish for quick cooked potatoes.

I have changed this over the years but it is the most requested dish I have ever made. I add extra everyting but keep to the basic recipe. I cook all the time but everyone asks if I am making this and it's gone in 4 minutes at work Love it

I am so glad I found this recipe! I am part of a moms' group and we take turns making breakfast. Everyone had a great casserole but me! This is perfect for a hungry crowd to go home happy. Love it!
