Fancy Roasted Nuts Recipe

Ingredients

  • 1/4 cup sugar
  • 2 tablespoons olive oil
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 4 cups mixed nuts

Directions

  • In a large bowl, mix the first six ingredients. Add nuts; toss to coat. Spread onto a 15-in. x 10-in. x 1-in. baking pan.
  • Bake at 300° for 35-40 minutes or until nuts are lightly toasted and appear dry, stirring occasionally. Serve warm or at room temperature. Store in an airtight container. Yield: 4 cups.

I've made this recipe several times using walnuts, pecans and peanuts. It has just the right amount of sweet and spice. I even tried sprinkling a few over vanilla ice cream - yummmm!

I am always looking for a good recipe for roasted nuts. This is by far the best I've ever tried! They were a huge hit everywhere I took them this holiday season and now I'll be making them for our Super Bowl Party.

These are tasty! I almost didn't put in the full amount of cayenne because I don't like things very spicy, but I stuck with the entire teaspoon and am very glad I did... there really isn't much heat to these, but 1 teaspoon was perfect. I used cashews instead of mixed nuts, personal preference. These nuts actually have a barbecued flavor... makes sense when you look at the ingredients I guess. The one thing I didn't like about this recipe is that the nuts turn out very grainy because of the sugar... I'd be more inclined to make these again if I maybe either added a little water so some of the sugar would dissolve... or maybe even try an egg white to coat the nuts first like I do for my cinnamon spiced almonds that I make. Overall this is a great and tasty recipe... if I can figure out how to make the sugar part less grainy, this would definitely be a 5-star recipe!

I'm not a big fan of mixed nuts, so I used just peanuts...but they are D-licious.
