Egg Salad Sandwiches Recipe

Ingredients

  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/2 cup chopped green pepper
  • 1/2 cup sweet pickles, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons horseradish sauce
  • 1 tablespoon sweet pickle juice
  • 1/4 teaspoon salt
  • 6 hard-cooked eggs, chopped
  • 12 slices white bread
  • Lettuce leaves and tomato slices, optional

Directions

  • In a small bowl, combine the first seven ingredients; stir in eggs.
  • On six slices of bread, layer with 1/2 cup egg salad, lettuce and tomato slices if desired. Top with remaining bread slices. Yield: 6 servings.

Nutritional Facts 1 sandwich (calculated without lettuce and tomato) equals 347 calories, 17 g fat (6 g saturated fat), 240 mg cholesterol, 874 mg sodium, 34 g carbohydrate, 2 g fiber, 14 g protein.

Awesome,I would add just a little jalapeno to give it a bite. Otherwise it was great.

I love egg salad, my wife loves tuna salad so we have put 1/4 cup of drained tuna to this receipe and serve on a bed of lettuce cutting out the bread and calories, it is a change and remains delicious. - JP

I don't like pickles so I never put pickles in my egg or tuna salad. The one thing that I do put in my egg salad is tarragon. I love the flavor it gives with the eggs. Horseradish might be good, I'd leave out the green peppers.

I can see that you are annoyed by a previous comment.  However, I fail to see how name-calling improves the atmosphere.  Your point would have been just as clear without this final phrase.

I dont care for the sweet relish aI agree it overpowers the egg but it was still very good. Ill make it again but leave out the relish. Question though? If you dont like green peppers and horseradish why would you give this recipe a bad review and wright " yuck" Just dont make the recipe and keep your ignorant comments to yourself.

To All-

This was a great and super easy recipe. However, I didn't use as much green pepper and added a little bit of celery. Also, I don't like sweet pickles and dill works out great. In addition, I didn't use horseradish, I used dijon mustard. Also, as a final touch I added a few slices of crumbled up bacon to add a little more substance!! YUM!

I had made some egg salad earlier in the day and it was so bland. I came across this recipe and started adding to my own. It is so flavorful ow. I will be passing it on to family and friends.
