Easy Taco Casserole Recipe

Ingredients

  • 1 pound ground beef
  • 1 cup salsa
  • 1/2 cup mayonnaise
  • 2 teaspoons chili powder
  • 2 cups crushed tortilla chips
  • 1 cup (4 ounces) shredded Colby cheese
  • 1 cup (4 ounces) shredded Monterey Jack cheese
  • 1 medium tomato, chopped
  • 2 cups shredded lettuce

Directions

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the salsa, mayonnaise and chili powder.
  • In an ungreased 2-qt. baking dish, layer half of the meat mixture, chips and cheeses. Repeat layers. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Just before serving, top with tomato and lettuce. Yield: 6 servings.

Made for husband and me last night and both agreed was soooo much better than regular tacos! Much easier and not as messy to eat. Also added sour cream to top after baking. Will definately be making again!

We really liked this dish and I think it could be modified to add onions, green peppers, and corn too!

Instead having to cook up the meat and adding chili powder, I just used leftover taco meat that I had in the fridge from the tacos we had a couple nights before. I also added some chopped onion. Other than that, everything else was the same. Thanks for the recipe and I will definitely make this again!

This was great! I added corn and black olives the second time around and was just great! My kids love it. Sometimes we use Dorito's, too. YUM!

This is one of my favorites! Something about the salsa/mayo combo is very good, and not too spicy for our young daughter. I usually use ground turkey breast, and tonight I added black beans to the meat mixture and it was very good. The more fiber, the better! I add half the cheese, then the tortilla chips, then the rest of the cheese. Don't overbake! We love avocado, cilantro, tomatoes, lettuce and more salsa on ours.

It was okay...the cheese got a little hard on top so next time I'm not going to add the cheese til half way through.
