Easy Spanish Rice Recipe

Ingredients

  • 2 cups water
  • 2 cups instant brown rice
  • 1 envelope enchilada sauce mix
  • 1 cup picante sauce

Directions

  • In a large saucepan, bring water to a boil; stir in rice and sauce mix. Return to a boil. Reduce heat; cover and simmer for 5 minutes. Remove from the heat; stir in picante sauce. Let stand for 5 minutes before serving. Yield: 4 servings.

Loved how easy it was and it paired well with the Cajun Perch we were having. Could not find enchilada sauce packet at the store so I just subbed a faijta seasoning packet. Seemed to work okay. Next time, I may play around w/ that though and do a comb seasoning with a tiny bit of taco sauce. I used Pace Med Picante, our fave. Also, just threw it all in a microwave dish and microwaved for 8 min. Seemed to work fine that way!
