It was fairly easy to cut the fat by using fat free cheese, sour cream and low-fat margarine. As with many recipes, taste is not sacrificed by juggling the fat content. This was easy and a nice change of pace for us (just the two of us as the kids are grown!) - and was easy to put a second serving in the freezer for next time!

I definitely want to make this. Is the liquid in the salsa and the lime juice sufficient to cook the rice or was something left out?

I'm making this for the second time tonight! I substituted plain rice for the Mexican rice and pasta mix to accomodate gluten free diets in our home. It was still very delicious!

I made this with 1 lb. of hamburger instead of chicken. Put it on shredded lettuce and topped it with salsa, tomatoes, sliced scallion, jalapenos, cheddar,and sour cream. It was great! I used tortilla chips to scoop it up. Hubby liked it, too.

I really enjoyed this recipe. I used Knorr package of Mexican Rice which I assumed is what was called for. My husband had it with chips I had it with wraps. For the people who do not like a lot of salt using this package of rice made it a little salty. I didn't mind it at all though!!

I know what you need to make for Cinco de Mayo!!! This one is a winner! It packs some great flavor and fresh avocados and tomatoes dress up any dish! Beautiful and delicious!

OMG was this easy, but better yet, it was soooo delicious!!!!!! I made this Saturday 4/24/10 & my husband who hates rice gave it 10 Stars!!!! Here are my slight changes: Made guacamole, didn't have lime juice, but I had lemon juice & shredded lettuce for this meal. P.S. I hate black olives, but now I'm a convert!!!!!! Thank You, Thank you for a wonderful recipe!!!!!!!!!!!!! It's a keeper!!!!
