Easy Italian Tomato Salad Recipe

Ingredients

  • 5 tablespoons olive oil
  • 4-1/2 teaspoons red wine vinegar
  • 2 tablespoons minced fresh basil
  • 1 tablespoon minced fresh parsley
  • 1 garlic clove, peeled
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 medium tomatoes, sliced
  • 1 small red onion, thinly sliced and separated into rings

Directions

  • In a blender, combine the first seven ingredients; cover and process until smooth. Arrange the tomatoes in a shallow serving dish; top with onion and dressing. Refrigerate until serving. Yield: 6 servings.

Nutritional Facts 1 serving (3/4 cup) equals 127 calories, 12 g fat (2 g saturated fat), 0 cholesterol, 108 mg sodium, 6 g carbohydrate, 1 g fiber, 1 g protein.

Ripen Garden Tomatoes

To ripen green garden tomatoes, put them in brown paper bags. Don't stack too many in one bag, or they might get bruised. Check them every few days and remove the ripe ones. —Delia Kennedy, Deer Park, Washington

This is such a refreshing tomato salad, pesto taste without the pine nuts and parmesan
