Easy Hummus Recipe

Ingredients

  • 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
  • 1/2 cup sun-dried tomato salad dressing
  • 2 garlic cloves, minced
  • Baked pita chips or assorted fresh vegetables

Directions

  • In a food processor, combine the beans, salad dressing and garlic. Cover and process for 30 seconds or until smooth. Serve with chips. Yield: 1-1/2 cups.

Nutritional Facts 1/4 cup (calculated without chips) equals 107 calories, 5 g fat (trace saturated fat), 0 cholesterol, 318 mg sodium, 14 g carbohydrate, 3 g fiber, 3 g protein.

I just made this in a pinch for a Super Bowl dip today. I didn't have the salad dressing, but used about 1/4 cup sun dried tomatoes packed in oil (I used the oil too), added about a tablespoon of extra virgin olive oil, and added water until it was a good consistency. It's really good! Great recipe (I'll try the salad dressing next time)...and typical TOH...saves my behind every time I need to make something easy and quick from whatever I have on hand! :)

Very easy, simple, and flavorful. Next time I think I will add a little oil (maybe cumin and/or cayenne) to the processing as the beans were extremely thick in my processor. I added more dressing and overpowered the hummus. I immediately opened another can of beans to balance to taste. Whew! Almost messed that one up... :) Great recipe.
