Easy Crab Pasta Salad Recipe

Ingredients

  • 2/3 cup uncooked spiral pasta
  • 1/2 cup crabmeat, drained, flaked and cartilage removed or 1 cup imitation crabmeat
  • 1/3 cup broccoli florets
  • 3 tablespoons chopped seeded tomato
  • 2 tablespoons chopped green pepper
  • 1 tablespoon sliced green onion
  • 3 tablespoons mayonnaise
  • 1 tablespoon prepared Italian salad dressing
  • 1/4 teaspoon grated Parmesan cheese

Directions

  • Cook pasta according to package directions; drain and rinse in cold water. In a bowl, combine the pasta, crab, broccoli, tomato, green pepper and green onion. In a small bowl, combine the mayonnaise, salad dressing and Parmesan cheese. Pour over salad mixture; toss gently to coat. Yield: 2 servings.

Nutritional Analysis: One serving (1 cup) equals 148 calories, 2 g fat (0 saturated fat), 33 mg cholesterol, 410 mg sodium, 22 g carbohydrate, 2 g fiber, 10 g protein. Diabetic Exchanges: 1 starch, 1 lean meat, 1 vegetable.

Seeding Tomatoes

Summer is the perfect time of year to enjoy fresh juicy tomatoes in all types of recipes. It's usually not necessary to remove the seeds from tomatoes before using. But for some recipes, seeding the tomatoes can improve the dish's appearance or eliminate excess moisture. For example, it's not important to seed tomatoes when preparing a tossed salad. But it's nice to remove the seeds when making creamy tomato soup to ensure a smooth texture. And using seeded tomatoes when assembling a casserole can prevent it from becoming watery. To remove the seeds from a tomato, cut it in half horizontally and remove the stem. Holding a tomato half over a bowl or sink, scrape out seeds with a small spoon or squeeze the tomato to force out the seeds. Then slice or dice as directed in the recipe.
