I would peel the potatoes next time and maybe add a little less butter. Everything else is excellent!

The chef who cooks at the steakhouse in our town likes cabbage so last St. Patrick's Day I made this Colcannon. He prides himself on his cooking being the best but he ate and ate and told his friend that he could founder himself on that dish. Coming from him, that is very high praise! It is so easy to make and goes well with any kind of meat. Great dish!

Being 100% Irish it is hard to give any of our dishes a 5 star rating. lol This came close. Did as others, reduced milk to 3/4 cup and simmered 12 min. When combined I mashed very lightly. Also increased salt to 1 1/2 tea. Just like beer, it does not have to be St Patrick's day to enjoy!

Great way to eat cabbage. Reheats well. I used 1 1/4 tsp salt.

This was really tasty once I cooked it down. I followed the recipe but as soon as I poured in the milk, I knew I had a bit of a mess on my hands - way too soupy! I just cooked it down and then it was fine. I would recommend draining the potato/cabbage mixture longer and don't add all the milk in at once.
