Peggy Reed of Vergennes, Vermont says her granddaughter Kelsey has always loved cooking. At age 4, Kelsey entered Bran Muffins in a baking contest. “The recipe Kelsey used is great for kids. The ingredients are measured in whole amounts,” Peggy explains. “It makes a lot of batter, but it can be stored in the refrigerator so the muffins can be made in batches.” By the way, Peggy also entered muffins in the contest, competing against Kelsey. Kelsey won the blue ribbon and Grandma came in second place!

Big Batch Baked GoodsWe enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

This is my go to recipe for bran muffins. My husband thought he disliked bran muffins until I made these--but I cut the recipe in half since there's only two of us. I always add ingredients to it such as cinnamon, apple pie spice, pumpkin pie spice, instead of water I sometimes soak the bran in my fresh orange juice and include orange rind. I usually include raisins or crasins. The possibilities are endless and oh so good. I take along extra refrigerated batter on motorhome trip and feel like Betty Crocker on the road!
