Easy Banana Bread Recipe
  • Prep: 15 min. Bake: 50 min. + standing
  • Yield: 16 Servings

Ingredients

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 2 eggs
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas

Directions

  • In a large bowl, cream shortening and sugar. Beat in eggs. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with bananas, beating well after each addition. Pour into a greased 8-in. x 4-in. loaf pan.
  • Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Let stand for 10 minutes before removing from pan; cool on a wire rack. Yield: 1 loaf (16 slices.).

Nutritional Facts 1 serving (1 slice) equals 133 calories, 5 g fat (1 g saturated fat), 27 mg cholesterol, 146 mg sodium, 20 g carbohydrate, 1 g fiber, 2 g protein.

Seemed to lack flavor. I might consider using butter instead of shortening next time.

I get requests for this banana bread every year. I like to add either dried golden raisins or diced dried apricots. Its adds another fruit dimension to the banana....

Wonderful taste and texture. Not heavy and dense like some banana breads. I did not have an 8X4 loaf pan, so I made 12 muffins and baked them for 25 minutes. I liked the fact that they came out nice and golden yellow, not brown. I will have to get the right size loaf pan for this recipe alone! Can't wait to make it again.

Excellent! I only had one banana so I finely chopped an apple, added 1 tsp Almond extract, and 1/3 cup Almond milk. Very moist! My husband loves it! Will definitely will make it again.

This recipe is great! My husband ate almost the whole loaf before he went to work! Maybe next time I will try to put my own spin on it, but there is really no need. It is a fantastic recipe!

This is such an easy recipe and SO good! Very moist and tasty. I have made it following the recipe exactly and also subbin 1/2 cup of butter for shortening and adding 1/2 tsp vanilla. Both are equally good.

Yum, this recipe is lovely. I made it on the weekend, but made a minor adjustment because I had a lot of bananas that were way past their prime. I microwaved 5 bananas with plastic wrap for about 5 minutes, and then poured off the juice into a sauce pan and cooked it down until it reduced to a 1/4 cup of "banana juice" and added it back into the softened bananas. Warning don't try this unless you really love the flavor of banana (which I do)!

jabe1946 Many of us seldom prepare a recipe as written as we are creative and like to try something different. I very often look through related recipes and create something using something from many of them. It's just the "nature of the beast"

This banana bread is a big hit with my family. To make it lighter I used light margarine and 4 egg whites in place of the whole eggs and then added 1 tsp vanilla and my son loves choc chips so I added 1/2 cup of minis and sprinkled the top with brown sugar for a crunchy top & cinnamon and more choc chips....boy it was great!

Moist and soft. Very tasty. I added 1 tsp vanilla and 1/4 tsp cinnamon. I used parchment paper in my pan. Lift to rack, cool and serve!

I get requests every year for this bread. I also like to add either white raisins or chopped dried apricots to the bread for that extra fruity flavor. Usually just a 1/2 cup is plenty.

Used 1/2 c butter instead of shortening, aded some vanilla, and because the batter turned out really thick and tough i added a little milk. came out nice

I didn't try the recipe. I am always amazed at how people tell how good they like the recipe, but have changed it some small way or in some cases large ways. If you liked it

This bread was very easy to make. I added 1 teaspoon of vanilla and when I greased the pan I "floured" it with sugar. The bread was very moist and tasty!

I also have been making this recipe for years. I add vanilla too. It is really versitile. I add pecans, or blueberries and bit of lemon zest, sometimes chocolate chips and walnuts. I make mini loaves and freeze them. When my kids need something for a bake sale they are ready to go

I would add vanilla the next time I make it and maybe cinnamon. Was very moist... I used butter (not shortening).

I have made this recipe for years. It is one of my favorites. I put it in a plastic container with a lid right out of the oven and let it cool. It is sooo moist this way. Even the crust it soft.

This was easy and I even made some simple changes to make 6 mini loaves. I used 3 banana instead of 1 c. I divided my mixture. One of the mixtures; I added chopped peacans, and chocolate chips. The other I left alone as is. Near end of baking time I drizzled honey over the top of it and let it bake 5 mins. My cooking time was cut in half due to the mini loaves and I even lowered the cooking temp. to 325 degrees. My family were eating it right out of the oven and well I rated this recipe 5 stars. Now I have to make more gifts because they ate it all gone. Thank you for sharing.
