Easy Banana Bread Recipe
  • Prep: 15 min. Bake: 50 min. + standing

Ingredients

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 2 eggs
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas

Directions

  • In a large bowl, cream shortening and sugar. Beat in eggs. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with bananas, beating well after each addition. Pour into a greased 8-in. x 4-in. loaf pan.
  • Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Let stand for 10 minutes before removing from pan; cool on a wire rack. Yield: 1 loaf (16 slices.).

Nutritional Facts 1 serving (1 slice) equals 133 calories, 5 g fat (1 g saturated fat), 27 mg cholesterol, 146 mg sodium, 20 g carbohydrate, 1 g fiber, 2 g protein.

Seemed to lack flavor. I might consider using butter instead of shortening next time.

I get requests for this banana bread every year. I like to add either dried golden raisins or diced dried apricots. Its adds another fruit dimension to the banana....

Wonderful taste and texture. Not heavy and dense like some banana breads. I did not have an 8X4 loaf pan, so I made 12 muffins and baked them for 25 minutes. I liked the fact that they came out nice and golden yellow, not brown. I will have to get the right size loaf pan for this recipe alone! Can't wait to make it again.

Excellent! I only had one banana so I finely chopped an apple, added 1 tsp Almond extract, and 1/3 cup Almond milk. Very moist! My husband loves it! Will definitely will make it again.

This recipe is great! My husband ate almost the whole loaf before he went to work! Maybe next time I will try to put my own spin on it, but there is really no need. It is a fantastic recipe!

Made this cake and as soon as it came out of the over it was finished. This recipe will be my favorite for years to come because I will be using it over and over.

This is such an easy recipe and SO good! Very moist and tasty. I have made it following the recipe exactly and also subbin 1/2 cup of butter for shortening and adding 1/2 tsp vanilla. Both are equally good.

Yum, this recipe is lovely. I made it on the weekend, but made a minor adjustment because I had a lot of bananas that were way past their prime. I microwaved 5 bananas with plastic wrap for about 5 minutes, and then poured off the juice into a sauce pan and cooked it down until it reduced to a 1/4 cup of "banana juice" and added it back into the softened bananas. Warning don't try this unless you really love the flavor of banana (which I do)!
