Dried Fruit Muesli Recipe
  • Prep: 10 min. + chilling
  • Yield: 4 Servings

Ingredients

  • 1 cup quick-cooking oats
  • 1 cup fat-free milk
  • 1/4 cup orange juice
  • 1/4 cup chopped dried apricots
  • 1/4 cup dried cranberries
  • 1/4 cup chopped dried apples
  • 2 tablespoons chopped almonds
  • 2 tablespoons honey
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground cinnamon

Directions

  • In a large bowl, combine all ingredients. Cover and refrigerate for at least 8 hours or overnight. Yield: 4 servings.

Nutritional Analysis: 1/2 cup equals 228 calories, 4 g fat (trace saturated fat), 1 mg cholesterol, 112 mg sodium, 43 g carbohydrate, 4 g fiber, 7 g protein. Diabetic Exchanges: 1-1/2 starch, 1 fruit, 1/2 fat-free milk, 1/2 fat.

My husband loves this! If I don't have all of the dried fruit on hand, I'll use just raisins.
