Double-Baked Mashed Potatoes Recipe

Ingredients

  • 2-1/2 pounds medium potatoes, peeled
  • 1 cup (8 ounces) sour cream
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • 1-1/2 cups (6 ounces) shredded cheddar cheese, divided
  • 1/2 cup chopped onion
  • 5 bacon strips, cooked and crumbled
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain.
  • In a large bowl, mash potatoes. Add the sour cream, milk, butter and 1 cup cheese. Stir in the onion, bacon, salt and pepper. Spoon into a greased 2-qt. baking dish. Sprinkle with remaining cheese.
  • Bake, uncovered, at 350° for 30-35 minutes or until heated though. Yield: 6 servings.

Nutritional Facts 3/4 cup equals 363 calories, 21 g fat (14 g saturated fat), 74 mg cholesterol, 537 mg sodium, 30 g carbohydrate, 2 g fiber, 12 g protein.

I didn't peel the potatoes because of a time constraint and I think this was even better that way!! My husband said this is one of his favorite potato casseroles I've ever made! I had to agree...it was delicious!!!

This is a fantastic recipe if you love twice baked potatoes but hate trying to refill the shells. When I made the recipe, I sauteed the onion with real bacon bits before adding it to the potato mixture.

This was incredible! I didn't add the onion either because some of my guest don't like them, but I did add onion powder and lots of garlic powder and more salt. I doubled the recipe and 6 adults I had here devoured it!! My husband is the quiet type and usually nods when I ask him if he liked something, this time he told me he LOVED it. Will be making it again on Monday!

Very good! I boiled the chopped onion with the potatoes since I didn't want to crunch into onion pieces. They mashed up nicely with the potatoes.

Very good recipe..didn't put in the onions because of someone being alergic to them..but kept everything else the same. Everyone really enjoyed it.

I like to use french onion dip in place of sour cream and onion. It makes a much richer tasting dish and you don't have to worry about the onions getting done. My picky eaters don't like the pieces of onion and this gives me the flavor I want without the pieces they don't want. Thanks for another great recipe.

Made this recipe for a church dinner & everyone really enjoyed it. Read the comment about the onions not being done enough. I sometimes chop onion and add a tab of butter and microwave for a ahort period when recipe doesnt call for cooking the onions. This tends to cook midly & soften them up because my family prefers them more tender too.

WOW - best potatoes I ever ate. I omitted onion and added garlic and parsley. I put slightly less cheese in mixture. I forgot bacon! but in future will put it on top with the cheese. It is amazing.
