Fun for a graduate's party, these easy sandwiches can be made ahead and chilled. Thinly sliced ham, turkey, beef and cheese are other options for the filling. I've also used halves of 6-inch tortillas to make smaller "diplomas."

For a vegetarian filling, I used cream cheese mixed with finely diced carrots, celery, onion, red & green peppers, chives, and parsley. I also used flour tortillas rather than bread, and just trimmed the edges. They were the hit of the party!

Great idea! All these recipes came out after graduation- in Texas we have HS graduation in May. I would try this recipe using flour tortillas.

I did these for my stepson's graduation a few years ago. They were super easy to assemble plus looked great on the table.
