Dijon Spinach Apple Salad Recipe

Ingredients

  • 6 cups fresh chopped spinach
  • 1/2 cup chopped red delicious apple
  • 1/4 cup golden raisins
  • 2 tablespoons sliced almonds, toasted
  • 5 tablespoons unsweetened apple juice
  • 3 tablespoons cider vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon vegetable oil
  • 1/4 teaspoons garlic powder
  • 1/4 teaspoons black pepper

Directions

  • In large bowl, add spinach, apples, raisins, and almonds. Toss gently.
  • In small bowl or jar, put apple juice, cider vinegar, Dijon mustard, oil, garlic powder, and pepper.
  • Use whisk to blend dressing in bowl, or cover jar and shake well.
  • Pour dressing over salad and toss lightly.

Nutritional Facts 1 serving equals 51 calories, 1 g fat (trace saturated fat), 46 mg sodium, 10 g carbohydrate, 1 g protein. Diabetic Exchanges: 1/2 fruit, 1/4 vegetable, 1/4 fat.
