Dijon Sole Fillets Recipe

Ingredients

  • 1 lb sole fillet, rinsed and patted dry
  • 2 tablespoons dijon mustard
  • 1 tablespoon mayonnaise
  • Pinch black pepper
  • 1 fresh lemon, cut into wedges
  • 2 tablespoons chopped parsley
  • Cooking spray

Directions

  • Preheat broiler.
  • Coat broiler pan with nonstick cooking spray. Place fish on broiler pan.
  • In small bowl, mix mustard and mayonnaise. Coat fish with mixture. Sprinkle with pepper.
  • Broil fish for 8 minutes or until flakes easily with fork.
  • Garnish with the parsley and serve with lemon wedges.
