Deluxe Chocolate Marshmallow Bars Recipe
  • Prep: 25 min. Bake: 15 min. + cooling

Ingredients

  • 3/4 cup butter, softened
  • 1-1/2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1-1/3 cups all-purpose flour
  • 3 tablespoons baking cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts, optional
  • 4 cups miniature marshmallows
  • TOPPING:
  • 1-1/3 cups semisweet chocolate chips
  • 1 cup peanut butter
  • 3 tablespoons butter
  • 2 cups Rice Krispies

Directions

  • In a small bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
  • Combine the flour, cocoa, baking powder and salt; gradually add to creamed mixture. Stir in nuts if desired. Spread in a greased 15-in. x 10-in. x 1-in. baking pan.
  • Bake at 350° for 15-18 minutes or until set. Sprinkle with marshmallows; bake 2-3 minutes longer or until melted. Place pan on a wire rack. Using a knife dipped in water, spread marshmallows evenly over the top. Cool completely.
  • For topping, combine the chocolate chips, peanut butter and butter in a small saucepan. Cook and stir over low heat until blended. Remove from the heat; stir in Rice Krispies. Spread over bars immediately. Chill until set. Yield: 3 dozen.

Nutritional Facts 1 serving (1 each) equals 194 calories, 11 g fat (5 g saturated fat), 30 mg cholesterol, 143 mg sodium, 23 g carbohydrate, 1 g fiber, 3 g protein.

Rave reviews from my college kid! Made these in a disposable 9x13 baking pan and shipped them the next day after chilling in the fridge overnight. Got a call the day they arrived! :D He said he LOVED them and wouldn't change a thing. That's definitely a 5-star treat in my book!!

Easy and delicious. I left out the peanut butter since we have a severe allergy in our home. My family couldn't get enough of these. I made the marshmallow part easy and used mini marshmallows and put them on top of the brownie and into the oven for a few minutes. When they came out the marshmallow was nice and toated, and didn't need to be spread. I do not put these in the refrigerator because the top would have been too hard to cut into. I would definitely make these again. Family was asking for them before the pan was empty.

I didn't care that much for these. Didn't have any trouble mixing them up, or cutting through the marshmallow layer. Just didn't excite me.

The marshmallow center was so hard to chew after chilling and can not keep out of frig because the top layer will melt.

This was so good! And so easy to make. We will be having this again - soon. And I had no problem using the miniature marshmallows. I simply covered the top with the marshmallows and popped the pan back in the oven for 2 minutes, took it out and smoothed the marshmallows out some.

Made this recipe last night with my mom. Luckily she makes these every year for Christmas and gave me tips or else I'd be dealing with problems others seem to be experiencing. I didn't really use this recipe in particular but one she had that's very similar. We use marshmallow cream and scoop it out in blobs. While the oven is still warm pop it back in there and it'll melt making it much easier to spread. For the top layer we used half chocolate chips and half butterscotch for a variety to this recipe. VERY Addicting! Hope this helps =]

Made this recipe once from scratch and came out very good, although just a warning to others, today I tried to make it again but this time with box brownies and it was horrible there was to much marshmellows and it was a disater for me. But making a second batch this time and I think im gonna add less marshmallows this time and btw if anyone knows a supstitiutuon when using box brownie mix please let me know

While these were very good and I will make them again, the marshmallows did not spread easily so mine aren't as pretty as the picture either. I might try marshmallow creme next time. Has anyone tried this with good results???

These are delicious and addicting - it's hard to eat just one! They're very rich, so cut them on the smaller side. And the chocolate topping can start to melt easily, so I store them in the refrigerator.

These bars were yummy and strangely, not too sweet. Cut in small slices they reminded me of a krispy candy bar instead of a cake bar. The PButter is barely noticeable, if you are looking for a strong Pbutter taste, you should use a little extra. Next time I will use More marshmallows as was suggested by one other person. The marshmallow is what keeps the bar from just being another ordinary chocolate bar, so load it up!

I was out of marshmallows (thanks small children). So I tried meringue. Epic fail. Not recommended. Still tastes yummy, but not pretty at all.

Loved everything about this recipe although there are two things I would do differently. The first is that I left it in a little longer and the bottom layer came out hard like a cookie. The second thing is that my chocolate did not set and was still a little messy. But, overall, love, love, loved it!!

These bars are great but we aren't big fans of peanut butter so I substituted Nutella ...they were delicious and I plan to make them again and again!

I have been making these for years. Please follow the directions exactly!!! I get requests for this at every holiday gathering. They also pack well in cookie tins for gifts!! Truly yummy!!!!!!!!!!!!!!!!!!!!!

I made these bars at I had rave reviews!! I just put the whole bag of miniature marshmallows and placed them stragetically on the brownie and kept them in the oven for 2 minutes longer, then there was no need to spead them out. I had no issue putting the top layer on the marshmallow. I am passing out the recipe....Thanks for sharing this recipe!!

Absolutely wonderful! My kids always loved this recipe. Now that my daughter is older, she makes 2 pans one for a special event, and the other just for herself! Best recipe ever! People usually ask for this recipe!

Oh my gosh soooooo good! The cake layer on the bottom is so moist and good, it would stand alone. But the top layer with the rice krispies is definately my favorite part. It was even good a couple days after it was made. I will definately make this again. The only tip I have is to cook the bottom layer for a little longer than suggested, because it was definately not all the way done with the suggested time.

I have made this recipe but for a short cut I use a brownie mix for a 9x13 pan and add the extra egg to make the brownie a little more cake like. I make this in a 9x13 pan (bake according to the time on box minus the 2 to 3 minutes) and use 2 1/2 cups of marshmallows and follow the same idea for baking the 2 to 3 minutes and follow the same topping recipe.

I wanted to like these bars, I really did! I made them and followed the recipe exactly. They baked well and the prep was easy. However, these bars are waaaay too rich for me and I'm a dessert lover too! This is one recipe that I won't be making again.

I made these the other day and they were excellent. I had to give them away because I kept eating them. I changed the recipe by using 2 cups of Chex cereal, then crushed it instead of using Rice Krispies. I also used crunchy peanut butter because that was what I had in the house.

I, too, was afraid that my brownies would not look like the ones in the picture. My marshmallows did not melt very much & they were kind of lumpy. But, to mix the choc., peanut butter, & butter, I used the microwave. 2 min. or less. Then, stir in the rice crispies. It was warm enough to spread & fill in the gaps between the marshmallows. Looks good!

I made these bars and they were excellent. I did have trouble though with the topping getting thick and not able to spread on the marshmallows. Came out clumpy which just made it not as pretty as the picture above. Do you have any tricks for this?

PEANUT BUTTER INCLUDED - Please remember to LABEL any items that you take to any function that contain peanuts, peanut butter, or nuts. These brownies would be deadly for my son if he were to accidently eat them. Often times peanut butter is in items and it is difficult to tell. You never know who might be eating these - don't make a deadly mistake.

I have had this recipe since it was published in an issue of Taste of Home that is at least 10 years old. It is ALWAYS a hit to make. I lost count of how many people requested the recipe from me. Not the best recipe for the summer, because they melt in the sun/warmth. I use the jelly roll pan and they are just right. To save on cleaning, use a foil lined pan. It's difficult to cut the bars - try using a warm knife. ENJOY!

I made these a month ago and they were mighty tasty! The only thing that was bad, was that I used a cookie sheet that was way too big, so they ended up being spread too thin. Next time I will use a smaller pan.
