Dark Chocolate Butterscotch Brownies

My daughters and I love homemade brownies. We experimented with many recipes and finally came up with this family favorite. The rich, satiny frosting and the butterscotch chips are irresistible.

Ingredients:
- 4 squares (1 ounce each) unsweetened chocolate
- 3/4 cup butter, cubed
- 2 cups sugar
- 3 egg whites
- 1-1/2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup 60% cocoa bittersweet chocolate baking chips
- 1 cup butterscotch chips
- GLAZE:
- 1 cup 60% cocoa bittersweet chocolate baking chips
- 1/4 cup butter, cubed
Directions:
In a microwave-safe bowl, melt unsweetened chocolate and butter; stir until smooth. Cool slightly. In a large bowl, combine sugar and chocolate mixture. Stir in egg whites and vanilla. Stir in flour. Stir in chips.
Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
For glaze, melt chips and butter; stir until smooth. Immediately spread over brownies. Cool before cutting. Yield: about 5 dozen. Editor's Note: This recipe was tested using Ghirardelli 60% cocoa bittersweet chocolate baking chips. Semisweet chocolate chips may be substituted.
