My daughters and I love homemade brownies. We experimented with many recipes and finally came up with this family favorite. The rich, satiny frosting and the butterscotch chips are irresistible.

Dark Chocolate Butterscotch Brownies Recipe

Ingredients

  • 4 ounces unsweetened chocolate, chopped
  • 3/4 cup butter, cubed
  • 2 cups sugar
  • 3 egg whites
  • 1-1/2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup 60% cocoa bittersweet chocolate baking chips
  • 1 cup butterscotch chips
  • GLAZE:
  • 1 cup 60% cocoa bittersweet chocolate baking chips
  • 1/4 cup butter, cubed

Directions

  • In a microwave, melt unsweetened chocolate and butter; stir until smooth. Cool slightly. In a large bowl, combine sugar and chocolate mixture. Stir in egg whites and vanilla. Gradually add flour to chocolate mixture. Stir in chips.
  • Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean (do not overbake). Cool on a wire rack.
  • For glaze, in a microwave, melt chips and butter; stir until smooth. Immediately spread over brownies. Cool before cutting. Yield: about 5 dozen.

    Editor's Note: This recipe was tested using Ghirardelli 60% cocoa bittersweet chocolate baking chips. Semisweet chocolate chips may be substituted.

These excellent for anyone who loves dark chocolate!..I even added instant coffee granules to the brownies. I Did not have bittersweet chocolate but used some semi and some unsweetened..I didn't cut back the sugar because of this and they turned out fine. Will definitely keep this recipe in mind!

I don't care for dark chocolate quite this much, if I ever did make them, I would have to replace the unsweetened and bittersweet chocolate with semi-sweet chocolate.

These brownies are a family favourite and one we make any time we have the ingredients. We love them and my kids make them as often as they can, as they vanish so fast. They're a keeper for sure and going in my recipe box.
