Curry-Cranberry Spinach Salad

Ingredients
- 5 cups fresh baby spinach
- 1/4 cup pine nuts
- 3 tablespoons dried cranberries
- 1 tablespoon sesame seeds
- 1/4 cup packed brown sugar
- 1/4 cup rice vinegar
- 1/4 cup olive oil
- 1 tablespoon soy sauce
- 2 teaspoons dried minced onion
- 1/2 teaspoon curry powder
- 1/4 teaspoon salt
Directions
- In a large salad bowl, combine the spinach, pine nuts, cranberries
- and sesame seeds. In a small bowl, whisk the remaining ingredients.
- Drizzle over salad and toss to coat. Yield: 5 servings.
