Curried Flounder Recipe

Ingredients

  • 24 ounces flounder fillet, 8 - 3 ounces. each
  • 2 green onions, minced
  • 2 garlic cloves, minced
  • 1/8 teaspoons curry powder
  • 1/8 teaspoons hot red pepper flakes
  • 2 tablespoons white all purpose flour
  • 1 tablespoon trans fat free margarine

Directions

  • Rinse fillets in cold water. Pat dry with paper towels and then place in shallow baking dish.
  • In small bowl, combine green onions, garlic, curry powder, and pepper. Rub over surface of the fillets. Cover and refrigerate for one hour.
  • Remove fillets from refrigerator.
  • Preheat oven to 350°F.
  • Dredge fillets through flour. Set aside.
  • Melt margarine in baking dish. Add filets, turning once to coat with margarine. Bake 5 to 10 minutes, or until the fish flakes easily with fork.

Very yummy. Instead of using flour, I used an egg mayo mixture to moisten the fish, then coated them in bread crumbs. I wanted a little more crunch. The flounder cooked 15 minutes, and it was the perfect time. I love the flavor of curry and this was perfect.
