Curried Chicken Salad with Grapes Recipe

Ingredients

  • 3 cups diced cooked chicken breast
  • 1-1/2 cup red or green grapes, halved
  • 1/2 cup chopped celery
  • 2 tablespoons chopped scallions
  • 1/2 cup chopped red bell peppers,
  • 3/4 cup mayonnaise
  • 2 tablespoons orange juice
  • 1 teaspoon curry powder
  • Pinch black pepper

Directions

  • In large bowl, mix chicken, grapes, celery, scallions, and peppers.
  • In small bowl, whisk mayonnaise, orange juice, curry powder, and pepper.
  • Coat chicken with dressing and toss. Serve.

Different, but good. The curry adds an interesting twist to chicken salad. Made exactly as written and wouldn't change anything.
