Curried Chicken (Gluten Free) Recipe

Ingredients

  • 1 whole roasting chicken, without skin
  • 1 teaspoon salt, to taste
  • 2 teaspoons fresh chives
  • 3 teaspoons ground thyme
  • 1 tablespoon canola oil
  • 1 medium onion, diced
  • 2 medium garlic cloves, diced
  • 1 tablespoon curry powder
  • 1/2 cup cold water, or more, if needed
  • 1 medium apples, peeled and chopped

Directions

  • Rinse and cut chicken into serving pieces.
  • In small bowl, mix salt, chives, and thyme. Dredge chicken though spices.
  • In large skillet, heat the oil over medium. Brown each piece of chicken for 5 minutes.
  • Add garlic and onion, and cook 20 minutes.
  • In small bowl, mix curry powder and water. Add to chicken.
  • Add apples and enough water to cover chicken. Cook until chicken is tender, about 20 minutes.

It was a little bland but tasted good with some additional spices and salt and pepper.
