Cucumber and Tomato Salad Recipe

Ingredients

  • 2 medium cucumber, peeled and thinly sliced
  • 1/2 teaspoons oregano leaves
  • 1 cup chopped tomato
  • 1/2 cup sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/2 teaspoons minced garlic
  • 1/3 cup white vinegar
  • 1/2 teaspoons sweetener (sugar substitute)
  • 3 tablespoons olive oil
  • Pinch salt and pepper

Directions

  • In a small bowl, mix the cucumber, tomato, onion, and feta.
  • In separate bowl, whisk together the garlic, vinegar, sweetener, oil, salt, and pepper.
  • Toss with the cucumber mixture. Chill until serving.
