Cucumber Tuna Appetizers Recipe

Ingredients

  • 2 cans (5 ounces each) light water-packed tuna, drained and flaked
  • 1/4 cup ricotta cheese
  • 2 tablespoons minced fresh basil
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon capers, drained
  • 1 teaspoon grated lemon peel
  • 1 garlic clove, minced
  • 1/8 teaspoon salt
  • Dash pepper
  • 1 medium cucumber, sliced

Directions

  • In a large bowl, combine the first ten ingredients. Cover and refrigerate until serving. Serve on cucumber slices. Yield: 20 appetizers.

Nutritional Facts 1 appetizer equals 30 calories, 1 g fat (trace saturated fat), 6 mg cholesterol, 79 mg sodium, 1 g carbohydrate, trace fiber, 4 g protein.
