Cucumber-Stuffed Cherry Tomatoes Recipe

Ingredients

  • 24 cherry tomatoes
  • 1 package (3 ounces) cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1/4 cup finely chopped peeled cucumber
  • 1 tablespoon finely chopped green onion
  • 2 teaspoons minced fresh dill

Directions

  • Cut a thin slice off the top of each tomato. Scoop out and discard pulp; invert tomatoes onto paper towels to drain.
  • In a small bowl, combine cream cheese and mayonnaise until smooth; stir in the cucumber, onion and dill. Spoon into tomatoes. Refrigerate until serving. Yield: 2 dozen.

Nutritional Facts 1 stuffed tomato equals 25 calories, 2 g fat (1 g saturated fat), 4 mg cholesterol, 18 mg sodium, 1 g carbohydrate, trace fiber, trace protein. Diabetic Exchange: 1/2 fat.

I grow several different kinds of tomatoes and cucumbers in my garden. I don't just make this for parties, I make this delicious dish all the time. You know when the cherry tomatoes start growing you can get hundreds every few days. The combination of ingredients in this recipe make a perfect flavor combination.

Does cream cheese come in 3 oz packages? I can only find 8 oz packages : (! Is this a typo in the recipe?

The finished product was quite tasty; one of my guests asked to take the leftovers home with him. However, note that this is a time-consuming recipe. Use good-sized cherry tomatoes; I made the mistake of using grape tomatoes (what I had on hand) and although I was able to stuff them, it was a difficult task.

Here's a hint for scooping out the pulp-use a grapefruit spoon-the serrated edge works great-loved these and have made them a couple of times:)

I have always loved the refreshing combination of tomatoes and cucumbers, so this one is a winner.

I'd like to address those concerned about the waste of time this recipe.

1) Use a "Tomato King" to scoop out the tomatoes .... available at Amazon.com.

When it comes to "time consuming" prep work, I follow this rule:

"If you're not cooking with joy, happiness, and love, then you're not cooking well." - Danny Kaye

Obviously, this is not a dish you're going to rush home from work on any average day and fix for your family; However, it is something that you can make for a special occasion where appetizers are called for. Then, you should be preparing it out of love that you have for the family and friends you are preparing the dish for. That is when the joy and happiness really kicks in for all involved.

Life is short, you have to cook, you might as well enjoy it! - :-)

These were a big hit at home so I am serving them for our family picnic. I am going to try chicken salad in them too. I also used the cherry tomatoes and the next size up from the cherry tomatoes.

These were a HIT at my Memorial Day party. Cleaning out the tomatoes was a little time consuming...but soooo worth it!!

Cherry tomatoes come in all sizes. I used the ones that are about the size of a ping pong ball (maybe slightly smaller). These were fantastic. Love the suggestions from some of the other posters!

This is an easy recipe. I didn't have fresh dill so I used dried dill & added it to the diced cucumbers - turned out fine. You do need to squeeze out any excess moisture from the cucumbers. The only suggestion would be to reduce the amount of mayo. I tasted it before adding the mayo and loved the taste. After the mayo was added I didn't get quite as strong a dill/cucumber taste. Will be making this again. Also would make a great dip for veggies or chips.
