Cucumber Onion Dip Recipe

Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup finely chopped seeded peeled cucumber
  • 1/4 cup finely chopped onion
  • 2 tablespoons mayonnaise
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Rye chips or crackers

Directions

  • In a small bowl, beat the cream cheese, cucumber, onion, mayonnaise, salt and pepper until blended. Refrigerate until serving. Serve with rye chips or crackers. Yield: 1-1/2 cups.

Nutritional Facts 2 tablespoons dip (prepared with reduced-fat cream cheese and fat-free mayonnaise; calculated without crackers) equals 50 calories, 4 g fat (3 g saturated fat), 14 mg cholesterol, 125 mg sodium, 1 g carbohydrate, trace fiber, 2 g protein. Diabetic Exchange: 1 fat.

Really good dip! Just made it, stirred everything together then put it in my blender which made it a littlle smoother than the picture but still very good has a very light taste.

Chopped tiny, mixed twice in my mixer and rested several hours before serving. I was hoping it would be a little yummier. Sorry. A little salty even though I used kosher salt. It may get better in a day. Maybe it needs some lemon juice? Guests asked about it though, so they liked it.

good, but i also modified it and used lays ruffle chips and it was a hit. i used 2 packages of cream cheese and i added a 1/2 container of small curd cottage chesse, i didnt use onions becuase my children do not like onion, it was a hit and very creamy.

Its easy, its tasty. I have used it w/ Ritz, put in a Russian Rye Bread Bowl, and it is enjoyed by all.

Perfect for any occassion!! Picnic, before a family get-together, anything. Easy & everybody enjoys it. Definity better with the Rye chips.
