Crustless Spinach Quiche Recipe

Ingredients

  • Olive oil cooking spray
  • 1/3 each frozen chopped onion
  • 4 medium fresh mushrooms, sliced
  • 1 plum tomato, chopped
  • 1 cup loosely packed chopped fresh spinach
  • 1 egg
  • 1 egg white
  • 1/2 cup whole milk
  • 1/2 teaspoons dijon mustard
  • 1 teaspoon chopped parsley
  • 1 teaspoon chopped fresh tarragon
  • 1/4 teaspoons salt, optional
  • 1/4 teaspoons paprika
  • Pinch freshly ground black pepper
  • 2 tablespoons shredded mozzarella cheese

Directions

  • Preheat the oven to 375°F. Coat quiche pan with cooking spray and set aside.
  • Coat large skillet with cooking spray. Saute onions and mushrooms for approximately 5 minutes.
  • Add spinach and tomato. Cook for 2 minutes, stirring frequently.
  • Place vegetables mixture in prepared baking dish.
  • In medium bowl, whisk egg, egg white, milk, mustard, parsley, tarragon, salt, paprika, and pepper. Pour into baking dish on top of vegetables. Sprinkle with cheese.
  • Bake for 20 minutes, uncovered, until fork comes out clean. Let cool for 5 minutes before cutting.

I made some changes because I was feeding a crowd with special diet requests. I removed the mushrooms and increased the tomatoes and used 6 eggs to 3/4 c milk. Versatile recipe, will use it again.
