I served this dish at a church luncheon and I had to laugh when one gentleman said to me, "This is good, and I don't even like broccoli!" I replied, "Sir, it isn't broccoli. It's spinach." He quickly answered, "Oh, I don't like spinach, either, but this is good!"

<p>I have been a spinach lover all my life, and love dishes that can be served for any meal. I really liked how easily this dish comes together, and without the extra fat and calories of a crust. I did drain and press the spinach well to make sure that most of the moisture was removed.</p>

This was my first time making quiche. It was easy to put together and was delicious. I used fresh spinach and sliced zucchini for the veg because that is what I had on hand. This recipe is a keeper.

I made this tonight with a few changes. I used fresh spinach which I sauteed with the onion. Instead of ham I used fresh tomatoes. This was delicious! A new favorite in our house!

Absolutely delish! I sub low fat cheeses (anything I have on hand) and any veggie when I don't have spinach. I used turkey bacon instead of ham once and the family loved it. The best thing about this recipe is that it's so versatile and so good! Leftovers are unheard of!!

I made this with a 3 cheese blend of mozzarella, provolone and chedder. It turned out amazing. Highly recommend.

Can substitute lots of veggies & meats with this. I make a vegetarian version without ham and it is great.

I made this for a ladies brunch. It turned out BEAUTIFULLY and everyone loved it and asked for the recipe. I would highly recommend using the Muenster cheese (as opposed to the Pepper Jack, that they say could be substituted) b/c it made it so nice and creamy. This recipe was easy to make, the prep time only took 10-15 minutes and it was absolutely delicious! A few people commented that they don't like spinach, but in this casserole it was great.*I didn't grate or shred my Muenster cheese (it was too soft) but I just cut it up into small cubes and it worked just fine... also much easier than grating it.
