Crunchy Romaine Strawberry Salad Recipe

Ingredients

  • 1 package (3 ounces) ramen noodles
  • 1 cup chopped walnuts
  • 1/4 cup butter
  • 1/4 cup sugar
  • 1/4 cup canola oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon soy sauce
  • 8 cups torn romaine
  • 1/2 cup chopped green onions
  • 2 cups fresh strawberries, sliced

Directions

  • Discard seasoning packet from ramen noodles or save for another use. Break noodles into small pieces. In a large skillet, cook noodles and walnuts in butter over medium heat for 8-10 minutes or until golden; cool.
  • For dressing, in a small bowl, whisk the sugar, oil, vinegar and soy sauce. Just before serving combine the romaine, onions, strawberries and noodle mixture in a large bowl. Drizzle with dressing and toss gently. Yield: 12 servings.

Nutritional Facts 1 serving (1 cup) equals 200 calories, 16 g fat (4 g saturated fat), 10 mg cholesterol, 81 mg sodium, 13 g carbohydrate, 2 g fiber, 4 g protein.

I brought this recipe in to church for a potluck. Since it's Lenten season, we couldn't have any meat.. or dairy products until Easter. I used canola oil to stir fry the ramen noodles and walnuts.. my cousin even mentioned that you can stir fry them in a dry pan (just for a shorter period of time). This went over very well! I hardly had anything to bring back home. :)

Excellent recipe - also easy! I think I will use a little less butter next time, as the noodles and walnuts were a little oily. I put on paper towels to drain a bit. Other than that, tasty as is!

I loved this and will definitely make it again!!! I doubled the dressing, and will most likely double the noodles and walnuts next time - that part really made the salad stand out and there just wasn't enough of that for me!! The flavor of the toasted walnuts was perfect with the other ingredients. I also added a little salt and pepper to taste (to my own portion). Yum! Thanks, Leslie!

Wonderful salad! The added crunch of the ramen noodles really makes it. I don't think it would serve 12, however. 6 servings is more like it.

 I, too, love this salad and just the two of us can eat the whole thing.  I use grape nuts cereal for the walnuts, which gives it a sweeter taste.  Oh so good!!!!!!!  We can't wait until June when fresh local strawberries are available to make it.

The only time I know ALL the salad will be eaten is when I make this one. I've substituted canned madarine oranges for the strawberries and slivered almonds for the walnuts because we like them better. The salad is just as good. This is a great recipe.
