Ingredients

  • 1 package (3 ounces) ramen noodles
  • 1 cup chopped walnuts
  • 1/4 cup butter
  • 1/4 cup canola oil
  • 1/4 cup sugar
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon soy sauce
  • 8 cups torn romaine
  • 1/2 cup chopped green onions
  • 2 cups fresh strawberries, sliced

Directions

  • Discard seasoning packet from ramen noodles or save for another use. Break noodles into small pieces. In a small skillet, saute noodles and walnuts in butter for 8-10 minutes or until golden; cool.
  • For dressing, in a jar with a tight-fitting lid, combine the oil, sugar, vinegar and soy sauce; shake well. Just before serving combine the romaine, onions, strawberries and noodle mixture in a large bowl. Drizzle with dressing and toss gently. Yield: 12 servings.

Nutrition Facts: 1 serving (1 cup) equals 200 calories, 16 g fat (4 g saturated fat), 10 mg cholesterol, 81 mg sodium, 13 g carbohydrate, 2 g fiber, 4 g protein.

This is one of our favorite salads. I made this recipe (without the onions) for my husband and I's wedding reception last year. It was a huge hit with everyone!!! Very refreshing on a summer day!!!

Wonderful salad! The added crunch of the ramen noodles really makes it. I don't think it would serve 12, however. 6 servings is more like it.

 I, too, love this salad and just the two of us can eat the whole thing.  I use grape nuts cereal for the walnuts, which gives it a sweeter taste.  Oh so good!!!!!!!  We can't wait until June when fresh local strawberries are available to make it.
