Crunchy Peanut Butter Bars Recipe
  • Prep: 30 min. Bake: 25 min. + standing
  • Yield: 18 Servings

Ingredients

  • 2-3/4 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1 egg
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1/2 cup chunky peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • TOPPING:
  • 1 cup (6 ounces) semisweet chocolate chips, melted
  • 1/2 cup chunky peanut butter
  • 1-1/2 cups crushed cornflakes

Directions

  • In a large bowl, combine the first eight ingredients; beat until crumbly. Press into an ungreased 9-in. square baking pan.
  • Bake at 350° for 25-30 minutes or until set. Cool for 5 minutes. Meanwhile, in a small bowl, combine chocolate chips and peanut butter; stir in cornflakes. Gently spread over top. Let stand until set. Cut into bars. Yield: 1-1/2 dozen.

Not with all that flour. Could it be there is a typo error. Maybe the amount of flour should be 1-3/4 cups. After following the recipe as written. I could not beat the flour ingredients. The basic recipe after baking was really to dry.

Due to comments, we took this recipe back into the Test Kitchen. We made a couple adjustments including changing the pan size to a 9-in. square pan. We hope that these bars become a household favorite! The recipe will be updated soon.

Like the others said, the bar layer is pretty dry and crumbly. And because there is peanut butter also mixed in the chocolate layer, it doesn't help the dry, pasty feeling. I probably won't make this again, but if I did I might make the first layer more of a moist shortbread with no peanut butter. Or, keep the peanut butter and instead take it out of the chocolate layer.

The flavor of these bars is yummy, but the texture is rather dry. I am going to try it again with either more margarine or adding a little milk. Thanks sharing the recipe!

Too crumbly. I'll never make again. They look good in the picture, though.

Sorry, but these were a disappointment. I made them for a gathering and ended up not taking them!
