Crunchy Apple Salad Recipe

Ingredients

  • 6 tablespoons fat-free sugar-free vanilla yogurt
  • 6 tablespoons reduced-fat whipped topping
  • 1/4 teaspoon plus 1/8 teaspoon ground cinnamon, divided
  • 2 medium red apples, chopped
  • 1 large Granny Smith apple, chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons chopped walnuts

Directions

  • In a large bowl, combine the yogurt, whipped topping and 1/4 teaspoon cinnamon. Add apples and cranberries; toss to coat. Refrigerate until serving. Sprinkle with walnuts and remaining cinnamon before serving. Yield: 5 servings.

Nutritional Facts 3/4 cup equals 109 calories, 3 g fat (1 g saturated fat), trace cholesterol, 12 mg sodium, 22 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchanges: 1 fruit, 1/2 starch, 1/2 fat.

I made this several times and everybody raves about it. I don't like cranberries, so I substitute grapes.

Light, but filling. I used pecans instead of walnuts. My 3 year old, loved it. Definitely something we'll be making regularly-- its a hit!

I have made this recipe many times. I followed the recipe exactly several times & I've also modified it by omiting the whipped topping & using additional yogurt & whatever apples we have on hand. I think it's delicious both ways & has become a new favorite for our lunches!

This made a huge hit with my family. The mixed flavors are wonderful, but I did back off a little on the cinnamon. Made it while we were on vacation and it was loved by all.

I omitted the whipped topping and just added more of the yogurt which wasn't sugar-free just all natural. It was still great and sweet. Even my husband who doesn't care for apples loved it.
