Ingredients

  • 2 boneless skinless chicken breast halves (5 ounces each)
  • 2 tablespoons honey mustard
  • 1/2 cup crushed french-fried onions

Directions

  • Coat chicken with honey mustard, then roll in crushed onions. Place on a foil-lined baking sheet. Bake at 375° for 20-25 minutes or until chicken juices run clear. Yield: 2 servings.

Nutritional Analysis: 1 chicken breast half equals 310 calories, 14 g fat (3 g saturated fat), 79 mg cholesterol, 321 mg sodium, 15 g carbohydrate, 1 g fiber, 31 g protein. Diabetic Exchanges: 4 very lean meat, 2 fat, 1 starch.

I baked it a little longer as they were big breasts.
