Creamy Turkey Pot Pie Recipe

Ingredients

  • 1 package (10 ounces) Pepperidge Farm® Puff Pastry Shells
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped (about 1/2 cup)
  • 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular, 98% Fat Free or Healthy Request®)
  • 1/2 cup milk
  • 1 package (10 ounces) frozen peas and carrots
  • 2 cups shredded or cubed cooked turkey or chicken

Directions

  • Prepare the pastry shells according to the package directions.
  • Heat the oil in a 10-inch skillet over medium-high heat. Add the onion and cook until it's tender, stirring occasionally.
  • Stir the soup, milk and peas and carrots in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the vegetables are tender. Stir in the turkey and cook until the mixture is hot and bubbling. Spoon the turkey mixture into the pastry shells. Top with the pastry "tops", if desired. Yield: 6 servings.

This recipe included a few "first" for me. I'd never used puff pastries or made home made pot pies.

Unfortunately, there were no directions on the pastry box that yielded the shape shown in this pic, therefore my pot pies actually came out like over blown biscuts with filling resting on top.

To boost the flavor a bit, I'd suggest adding salt & pepper to taste, and possibly adding a little minced garlic in the filling while cooking.

Other than the presentation, my family enjoyed the flavor.

I do something very similar to this using tuna. These were delicious and fancy enough for company.

The taste was wonderful. The directions stated to prepare according to pkg directions and the pkg said to prepare according to recipe. What to do? I am 69; my daughter in law 25 and we were stumped. We put the pastry in muffin tins and the outside was wonderful but in the middle was gooey so we laid them out on a cookie sheet and baked until done. How in the world did you get the pastry to look like the photo?
