Creamy Tomato Soup with Fresh Spinach Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 lb plum tomatoes, chopped
  • 2 tablespoons minced fresh basil
  • 2 cups low sodium chicken broth
  • 1 cup fresh chopped spinach
  • 1/2 teaspoons salt, to taste, optional
  • 1/4 teaspoons freshly ground black pepper
  • 2 tablespoons grated Parmesan cheese

Directions

  • In large saucepan, heat oil over medium high. Add onion and saute until softened, about 4 minutes.
  • Stir in tomatoes and basil. Cook until tomatoes are tender, about 5 minutes.
  • Transfer mixture to blender or food processor. Puree until smooth, return to pot.
  • Add broth, bring to boil.
  • Add spinach, cook until wilted, about 1 minute.
  • Season with salt and pepper. Ladle into serving bowls and garnish with Parmesan cheese.
