I took my mother's delicious sweet potato casserole recipe and gave it a new twist by adding the tempting taste of orange-a fruit very abundant in our state. The flavors are wonderful together and make this dish a family favorite.

Creamy Sweet Potatoes Recipe
  • Prep: 15 min. Bake: 40 min.
  • Yield: 10-12 Servings

Ingredients

  • 5 pounds sweet potatoes, peeled and cooked
  • 4 eggs, lightly beaten
  • 1/2 cup orange juice
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • Dash salt
  • 1 cup miniature marshmallows

Directions

  • In a large bowl, mash sweet potatoes. Add eggs, orange juice, butter, sugar, vanilla, nutmeg and salt; mix well. Transfer to a greased 3-qt. baking dish.
  • Bake at 350° for 35-40 minutes or until set. Top with marshmallows; return to oven until they just begin to puff and melt, about 5-10 minutes. Yield: 10-12 servings.

Made this for Thanksgiving and making it again for Christmas. I used brown sugar and added a bit of cinnamon. The addition of orange juice makes these sweet potatoes super good. The whole family loves them and this is the recipe I will use for holidays from now on.

Too much nutmeg for my taste. I missed the the taste of cinnamon and brown sugar! Always game to try something new, this one just was not one of my favorites.

I was looking for a sweet potato dish that wasn't quite as sweet and calorie-laden as the recipe I've used in recent years. This looked tasty and easy and it hit the mark on both counts! The mix of orange juice, vanilla and nutmeg was perfect. It received positive reviews from our Thanksgiving guests, even though I completely forgot to sprinkle on the marshmallows at the end in the rush to get all of the other dishes on the table. It was still delicious!

This recipe is like my mom's too except I substituted the white sugar for dark brown sugar and only used 6 Tbsp of butter to cut out some of the fat. Great basic southern sweet potato recipe. I make this every Thanksgiving but use the brown sugar. And yes, I top it with roasted marshmallows.

I have made this for many years.I always make it the day before and slightly under cook it then reheat in oven while the turkey is resting.It makes a lot.

Last years sweet potato recipes was was too sweet, more like a dessert. I wanted to try something new and this recipe was great. I think next time I will add a little brown suger because I like the taste, but I will definately be making this again.

Very good! I used 3 eggs instead of 2 and 2/3 cup brown sugar in place of the 1/2 cup regular.

Made this dish for our fall family party. I whipped the sweet potatoes after cooking them with the mixer. The flavor with just a little orange juice was wonderful. No left overs, and I am back today to reprint the receipe for Thanksgiving.

I mashed the sweet potatoes in my food processor to make them even creamier. I will add a little cinnamon next time. I loved the hint of orange and the eggs made it so light! Great recipe.

I tried this recipe when I hosted my first all-family Thanksgiving dinner and they loved it. I tried another recipe the next year but they didn't like it as much. I have used this recipe every Thanksgiving for the past eight years.
