I took my mother's delicious sweet potato casserole recipe and gave it a new twist by adding the tempting taste of orange-a fruit very abundant in our state. The flavors are wonderful together and make this dish a family favorite.

Creamy Sweet Potatoes Recipe
  • Prep: 15 min. Bake: 40 min.
  • Yield: 10-12 Servings

Ingredients

  • 5 pounds sweet potatoes, peeled and cooked
  • 4 eggs, lightly beaten
  • 1/2 cup orange juice
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • Dash salt
  • Marshmallows

Directions

  • In a large bowl, mash sweet potatoes. Add eggs, orange juice, butter, sugar, vanilla, nutmeg and salt; mix well. Transfer to a greased 3-qt. baking dish.
  • Bake at 350° for 35-40 minutes or until set. Top with marshmallows; return to oven until they just begin to puff and melt, about 5-10 minutes. Yield: 10-12 servings.

Nutritional Facts 1 serving (3/4 cup) equals 311 calories, 10 g fat (5 g saturated fat), 91 mg cholesterol, 196 mg sodium, 53 g carbohydrate, 5 g fiber, 4 g protein.

Last years sweet potato recipes was was too sweet, more like a dessert. I wanted to try something new and this recipe was great. I think next time I will add a little brown suger because I like the taste, but I will definately be making this again.

Very good! I used 3 eggs instead of 2 and 2/3 cup brown sugar in place of the 1/2 cup regular.

This is a keeper.

Made this dish for our fall family party. I whipped the sweet potatoes after cooking them with the mixer. The flavor with just a little orange juice was wonderful. No left overs, and I am back today to reprint the receipe for Thanksgiving.

I mashed the sweet potatoes in my food processor to make them even creamier. I will add a little cinnamon next time. I loved the hint of orange and the eggs made it so light! Great recipe.

I tried this recipe when I hosted my first all-family Thanksgiving dinner and they loved it. I tried another recipe the next year but they didn't like it as much. I have used this recipe every Thanksgiving for the past eight years.
