Creamy Strawberry Salad Dressing Recipe

Ingredients

  • 1 cup sliced fresh strawberries
  • 1/2 cup orange juice
  • 2 tablespoons Strawberry Vinegar
  • 2 tablespoons olive oil
  • 4 teaspoons honey
  • 1/4 teaspoon salt
  • Baby spinach, red onion rings, orange segments, toasted sliced almonds and additional fresh strawberries

Directions

  • In a blender, combine the first six ingredients. Cover and process until pureed. Refrigerate until serving. In a salad bowl or on individual salad plates, combine the spinach, onion, orange, almonds and additional strawberries. Serve with dressing. Yield: 1-1/2 cups.

While making the Chicken Berry Salad recipe found on this site, I decided the marinade-based dressing didn't sound too appealing. Instead, I searched for a dressing that would complement the flavors of the salad and this was a perfect match! An added bonus is that it is only 19 calories per tablespoon! This dressing would be tasty on many salads, but it was truly amazing when paired with the Chicken Berry Salad. Thank you so much for providing this recipe!
