Creamy Pineapple Coleslaw Recipe

Ingredients

  • 2-1/2 cups shredded cabbage
  • 1 can (8 ounces) unsweetened crushed pineapple, drained
  • 1/4 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • In a small bowl, combine all ingredients. Cover and refrigerate for at least 2 hours before serving. Yield: 2 servings.

Nutritional Facts 1 serving (3/4 cup) equals 290 calories, 22 g fat (3 g saturated fat), 10 mg cholesterol, 462 mg sodium, 23 g carbohydrate, 3 g fiber, 2 g protein.

My grandma used to make a similar version and sprinkled salted peanuts on top, cashews work too!

If you like pineapple, as my husband and I do than this is the coleslaw recipe for you. I love that it has so few ingredients, is easy and fast to make too.
