Creamy Makeover Macaroni and Cheese Recipe

Ingredients

  • 1 package (16 ounces) elbow macaroni
  • 2 tablespoons butter
  • 1/3 cup all-purpose flour
  • 2 cups fat-free half-and-half
  • 2 cups fat-free milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 3 cups (12 ounces) shredded reduced-fat sharp cheddar cheese
  • TOPPING:
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 5 cups cubed bread
  • 1/2 cup shredded reduced-fat cheddar cheese

Directions

  • Cook macaroni according to package directions. Meanwhile, in a large saucepan, melt butter over medium heat. Combine flour and half-and-half; stir into pan. Add milk and seasonings. Bring to a gentle boil; remove from the heat. Stir in cheese until melted. Drain macaroni; add to the cheese sauce and stir to coat.
  • Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. In a large skillet, saute onion in butter until tender. Add bread; saute 2-3 minutes longer. Sprinkle bread mixture and cheese over macaroni mixture. Bake, uncovered, at 350° for 25-30 minutes or until heated through. Yield: 10 servings.

Nutritional Facts 1 cup equals 432 calories, 15 g fat (9 g saturated fat), 41 mg cholesterol, 526 mg sodium, 55 g carbohydrate, 2 g fiber, 21 g protein.

This has become a staple at our house. I use whole wheat bread for the topping and I omit the onion. This is also great reheated.

When I made this recipe, turned out very bland. Did not have much cheesy taste at all. The leftovers went down the garbage disposer.
