Creamy Make Ahead Mashed Potatoes Recipe

Ingredients

  • 3 pounds potatoes (about 9 medium), peeled and cubed
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup butter, cubed
  • 1/4 cup 2% milk
  • 1-1/2 teaspoons onion powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 6 Wright® Brand Bacon strips, chopped

  • 1 cup (4 ounces) shredded cheddar cheese
  • 3 green onions, chopped

Directions

  • Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain; mash potatoes with cream cheese, sour cream and butter. Stir in milk and seasonings.
  • In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain.
  • Transfer potato mixture to a greased 13-in. x 9-in. baking dish; sprinkle with cheese, onions and bacon. Cover and refrigerate until ready to use.
  • Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40-50 minutes or until heated through. Yield: 10 servings.

Nutritional Facts 3/4 cup equals 419 calories, 24 g fat (15 g saturated fat), 74 mg cholesterol, 544 mg sodium, 41 g carbohydrate, 4 g fiber, 11 g protein.

Wow! I made these for our Christmas family get-together Dec. 23, and they were a big hit! I didn't have the sour cream on hand, but I substituted 1/2 cup extra milk. I also used a little less seasoning (garlic and onion powders). When baked, they puffed up so light and creamy. A winner for family gatherings!

Wonderful being able to prepare this recipe ahead of time. Thought it would be a little dry, but no, it was perfect. My husband, who isn't a mashed potato eater, thought it was great.

These potatoes are delicious, even if they are loaded with calories! I really like that they can be made the day before you need them. This recipe serves a crowd; I'd say more than 10 servings.

I've made these a couple of times already, and they are excellent. My kids love them. Thinking of making these today, for Easter. These are great for the holidays when you need to get a few menu items done ahead of time, and can just heat them through before serving. Love them!

These are easy and very, very good. You can prepare them a day ahead then pop in the oven when ready to cook. We will definitely keep them on the top 10 list in our house.

I made this for a small church dinner group (6), I found that I needed to add additional milk to get the potatoes creamy. I had some leftovers, so I put them in the food processor, added a tablespoon of flour and 1 egg and made potatoe pancakes. The cheese, bacon,onion topping ground up throughout the potatoes gave the pancakes a really unique flavor - very good!

This recipe went very well with the Italian Spiral Meatloaf. I used a box of Idaho Potatoes instead and I forgot to put the cream cheese and it still was the best textured mashed potatoes I ever made. I also only seasoned my potatoes with salt and pepper. I don't think I'll ever eat plain mashed potatoes again. Thank You!

Great recipe!! Easy to make ahead, and we have plenty leftover for tomorrow night's side dish. My family of 5 loved it...especially my kids and they are very picky. It is very rich...I did use skim milk, but may try to use light sour cream and light cream cheese next time to lower the fat content a little. Definitely not something I will make all the time, but it was a real treat. Thanks Amanda.
