My whole family loves this recipe. Satisfies that comfort food craving. With 8 hearty servings, it serves as two meals.

This is alwso a good one---easy, creamy and good Microwave Mac and Cheese believe this recipe was from TOH a while ago. It is very good. I'll list it as written and then give the variations I've added.2 cups uncooked elbow macaroni2 cups hot water1/3 cup butter1/4 cup chopped onion (used 1/2 cup)3/4 tsp salt1/4 tsp pepper1/4 tsp ground mustard (used 1 tsp)1/3 cup flour1 1/4 cups milk8 oz processed American Cheese cubed(used sharp cheddar shredded)In 2 qt microwave safe dish, combine the first 7 ingredients. Cover and micro on high for 3 1/2 minutes:stirCover and cook at 50% power for 4 minutes or until mixture comes to a boilCombine flour and milk until smooth and stir into macaroni mixture.Add cheeseCover and cook on high for 6-8 minutes until macaroni is tender and sauce is bubbly. Stir every three minutes.Tested in 850 watt micro.This is quite good especially for those who like really creamy, loose macaroni and cheese. You could add any kind of cheese or whatever you like to make it your own.Barb
